What is sourdough?

What we’re really doing with sourdough is that we go back to our roots and make bread like it was made thousands of years ago. A handcrafted bread that requires time, love and good products. Based on water, flour, salt, nothing more, nothing less. Of course different kind of seeds, nuts and other flavors, but no preservatives, additions and defiantly NO SUGAR! A quick descripting is that it is a healthier, more flavorful bread with long durability. Because of the natural fermentation which is very slow, minimum 24 hours, the gluten breaks down in smaller pieces which make our bodied happier to digest it and we stay energized from one slice until the next meal. The slow process also creates a hard crust that saves the nutrients and the flavors inside the bread. 

Once you started you can’t eat other type of breads.

About us & Our idea

In 2012 we – Petra Felix, and our daughter Chloe, a Swedish family arrived in Búzios and opened Villa Balthazar. We were struggling finding good bread and started to bake at home. Felix got passionate by sourdough and we decided to grow both our families. Our son Leon was born and the year after we opened Balthazar Bakery. Our main reason has always been to serve a real bread to the people in Búzios. When we started we were among the first sourdough bakeries in Brazil and we are so happy to see that the revolution for a better bread is growing and we are proud to be a part of that. To make sure that we know what we are serving all products possible are homemade, organic or produced in the area.  

Our intention

Our roots in Sweden and Scandinavia brings not only different flavors, methods, coffee cups and plates, we are also trying to spread our mindset how you work as a team where everyone needs to know a bit of everything and share the aswell the hard as the easy chores. We want to have an open and bright bakery in double sense. A ambient where all our clients can see our production and most important of all – The people behind our products. Our amazing crew.
